How many of us have been fasting preparing for tomorrow's feast?  I spent last night cooking pecan pies and today I am cooking sweet potato pies and a sweet potato Sonker.  My cousins from the great white north (Ohio) are here to prepare the rest of the feast, we are using my house.  All this being said just remember to give thanks to the Provider of all we have from turkey to styrene. GOD bless all of you.
When I win the Powerball I will switch to the real ones.

Sonker is a locally regional form of pie.  The county north of us claims to have devised it, however what they call Sonker I have always called a cobbler.  In my area a sonker is a deep-dish layered pie.  Works very well with sweet potatoes, blackberries, or other fruits. I put a layer of pie crust on the bottom of a deep baking dish, then sweet potatoes, spices and plenty of butter, another layer of crust cut into strips, more potatoes, spices, and butter, and another layer of crust.  When I prepare my potatoes I first peel, then steam them until they are 3/4 done.  I then slice them, once the pie is assembled I pour the water from steaming over the pie until it is just even with the top of the layers.  It is then baked until done.  If done correctly, it cannot be beat. A big scoop of sonker with some vanilla ice cream on top is right next to heaven.
The county north of us has an annual Sonker Festival.  I have never been, usually I hear about it from a newspaper article after it is over.

 :) Thank you.

One thinks one knows everything, and then one finds out that one does not.

Sounds delicious.  Maybe we will try to do one sometime.

Have a great holiday season.  You, and everyone.

The stuffing is being put into the turkey as I write this.  Been looking forward to this for several weeks. Probably regret it with a sore belly later but getting there is most of the fun.

Happy Thanksgiving to all of the STM crowd. With the short days upon us we are finding more time to work inside on model stuff. Let's keep posting up all that new work.
